Quick and flavorful BBQ chicken tacos made effortlessly in the Instant Pot. Perfect for weeknight dinners or gatherings.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream (optional)

Instructions

  1. Place chicken breasts in the Instant Pot.
  2. Add BBQ sauce, chicken broth, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Close the lid and set the valve to sealing.
  4. Cook on high pressure for 10 minutes.
  5. Allow natural pressure release for 5 minutes, then quick release the remaining pressure.
  6. Shred the chicken using two forks.
  7. Return the shredded chicken to the pot and stir to coat with the sauce.
  8. Warm tortillas and fill with chicken, lettuce, tomatoes, cilantro, cheese, and sour cream.
  9. Serve immediately.

Notes

  • Use your favorite BBQ sauce for best results.
  • For spicier tacos, add a pinch of cayenne pepper.
  • Leftovers can be stored in the fridge for up to 3 days.
