Description

Ingredients

  • 3 pounds corned beef brisket
  • 1 medium onion, quartered
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1 head green cabbage, cut into wedges
  • 4 medium carrots, cut into chunks
  • 2 medium potatoes, diced

Instructions

  1. Place the corned beef in the Instant Pot.
  2. Add the onion, garlic, beef broth, peppercorns, and mustard seeds.
  3. Secure the lid and set to high pressure for 90 minutes.
  4. Once finished, release the pressure and remove the corned beef.
  5. Add cabbage, carrots, and potatoes to the pot.
  6. Cook on high pressure for an additional 10 minutes.
  7. Release the pressure, serve with sliced corned beef.

Notes

  • Adjust cooking time depending on the size of the brisket.
  • For more flavor, use a homemade broth.
  • Leftovers can be stored in the fridge for up to 3 days.
