Ingredients

- 3 pounds corned beef brisket
- 1 medium onion, quartered
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds
- 1 head green cabbage, cut into wedges
- 4 medium carrots, cut into chunks
- 2 medium potatoes, diced
Instructions
- Place the corned beef in the Instant Pot.
- Add the onion, garlic, beef broth, peppercorns, and mustard seeds.
- Secure the lid and set to high pressure for 90 minutes.
- Once finished, release the pressure and remove the corned beef.
- Add cabbage, carrots, and potatoes to the pot.
- Cook on high pressure for an additional 10 minutes.
- Release the pressure, serve with sliced corned beef.
Notes
- Adjust cooking time depending on the size of the brisket.
- For more flavor, use a homemade broth.
- Leftovers can be stored in the fridge for up to 3 days.
