Ingredients

  • 1 cup of cabbage, chopped
  • 1 cup of carrots, sliced
  • 1 lb of corned beef
  • 4 cups of beef broth
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 2 tablespoons of butter
  • 1 tablespoon of mustard

Instructions

  1. Prepare the vegetables by peeling and chopping them.
  2. In a large pot, add beef broth, corned beef, potatoes, carrots, and cabbage.
  3. Season with salt and pepper.
  4. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  5. Remove corned beef, slice it, and set aside.
  6. Return vegetables to the pot, stir in butter and mustard.
  7. Serve hot with sliced corned beef on the side.
