Description
Traditional Irish food for St. Patrick’s Day celebration.
Ingredients
Scale
- 4 cups of potatoes, peeled and cubed
- 1 cup of cabbage, chopped
- 1 cup of carrots, sliced
- 1 lb of corned beef
- 4 cups of beef broth
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 2 tablespoons of butter
- 1 tablespoon of mustard
Instructions
- Prepare the vegetables by peeling and chopping them.
- In a large pot, add beef broth, corned beef, potatoes, carrots, and cabbage.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Remove corned beef, slice it, and set aside.
- Return vegetables to the pot, stir in butter and mustard.
- Serve hot with sliced corned beef on the side.
Notes
- Use fresh ingredients for better flavor.
- Adjust seasoning to taste.
- Can be made a day ahead and reheated.
