Celebrate St. Patrick’s Day with traditional Irish dishes.
Ingredients

- 4 cups of diced potatoes
- 1 cup of chopped leeks
- 1 cup of chopped carrots
- 4 cups of vegetable broth
- 1 cup of heavy cream
- Salt and pepper to taste
- 2 tablespoons of butter
Instructions
- Peel and dice the potatoes.
- Chop the leeks and carrots.
- In a large pot, melt the butter over medium heat.
- Add the leeks and carrots. Sauté until soft.
- Add the potatoes and vegetable broth. Bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Blend the mixture until smooth.
- Stir in the heavy cream. Season with salt and pepper.
- Serve hot.
Notes
- This dish can be made vegan by using coconut cream.
- Top with fresh herbs for added flavor.
