Ingredients
- Potatoes – 2 lbs
- Cabbage – 1 head
- Carrots – 4 medium
- Onions – 2 medium
- Beef – 2 lbs
- Butter – 1/2 cup
- Salt – to taste
- Pepper – to taste
- Irish stout – 1 cup
Instructions
- Peel and chop the potatoes and carrots.
- Slice the cabbage and onions.
- In a large pot, add the beef and cover with water.
- Bring to a boil and skim off any foam.
- Add potatoes, carrots, onions, and seasoning.
- Simmer for 1.5 hours.
- Add cabbage and stout and cook for another 30 minutes.
- Serve hot with butter on top.
Notes
- For a vegetarian version, replace beef with lentils.
- Serve with brown bread for a complete meal.
- Can be made in a slow cooker for convenience.
