Description
Tender beef slow-cooked with mushrooms in a rich Italian-inspired sauce.
Ingredients

- 2 lbs beef chuck, cut into chunks
- 1 lb mushrooms, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp olive oil
- 1 cup beef broth
- 1 cup red wine
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Brown the beef chunks on all sides, then remove from the pot.
- Add onions and garlic, sauté until softened.
- Stir in mushrooms and cook until they release their moisture.
- Return beef to the pot, add broth, wine, tomato paste, thyme, and rosemary.
- Bring to a simmer, then cover and cook on low heat for 2-3 hours until beef is tender.
- Season with salt and pepper before serving.
Notes
- Use a heavy-bottomed pot for even cooking.
- Substitute red wine with extra broth if preferred.
- Serve with mashed potatoes or crusty bread.
