Description

Tender beef slow-cooked with mushrooms in a rich Italian-inspired sauce.


Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 1 lb mushrooms, sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef chunks on all sides, then remove from the pot.
  3. Add onions and garlic, sauté until softened.
  4. Stir in mushrooms and cook until they release their moisture.
  5. Return beef to the pot, add broth, wine, tomato paste, thyme, and rosemary.
  6. Bring to a simmer, then cover and cook on low heat for 2-3 hours until beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • Use a heavy-bottomed pot for even cooking.
  • Substitute red wine with extra broth if preferred.
  • Serve with mashed potatoes or crusty bread.
