A spicy twist on classic meatloaf, combining jalapeño poppers and ranch flavors for a delicious meal.
Ingredients

- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup breadcrumbs
- 1 egg
- 1/4 cup ranch dressing
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 2 jalapeños, diced (seeds removed for less heat)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix ground beef, ground pork, breadcrumbs, egg, ranch dressing, garlic powder, onion powder, salt, and black pepper.
- In a separate bowl, combine cream cheese, cheddar cheese, and diced jalapeños.
- Press half the meat mixture into a loaf pan.
- Spread the cheese mixture evenly over the meat.
- Top with the remaining meat mixture, sealing the edges.
- Bake for 45-50 minutes or until internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing.
Notes
- Adjust jalapeño quantity for desired spiciness.
- Serve with extra ranch dressing if desired.
- Leftovers can be refrigerated for up to 3 days.
