Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 1 egg
  • 2 tbsp jambalaya seasoning
  • 1 onion, diced
  • 2 bell peppers, sliced
  • 3 cloves garlic, minced
  • 2 cups cooked rice
  • 1 can diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat oven to 375°F.
  2. Mix ground beef, pork, breadcrumbs, egg, and jambalaya seasoning in a bowl.
  3. Form into 1-inch meatballs and place on a baking sheet.
  4. Bake for 20 minutes or until browned.
  5. Heat olive oil in a large skillet over medium heat.
  6. Sauté onions, peppers, and garlic until soft.
  7. Add diced tomatoes and cooked rice to the skillet.
  8. Stir in meatballs and simmer for 10 minutes.
  9. Serve hot.
