Ingredients

- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 1 egg
- 2 tbsp jambalaya seasoning
- 1 onion, diced
- 2 bell peppers, sliced
- 3 cloves garlic, minced
- 2 cups cooked rice
- 1 can diced tomatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat oven to 375°F.
- Mix ground beef, pork, breadcrumbs, egg, and jambalaya seasoning in a bowl.
- Form into 1-inch meatballs and place on a baking sheet.
- Bake for 20 minutes or until browned.
- Heat olive oil in a large skillet over medium heat.
- Sauté onions, peppers, and garlic until soft.
- Add diced tomatoes and cooked rice to the skillet.
- Stir in meatballs and simmer for 10 minutes.
- Serve hot.
Notes
- Use a mix of red and green peppers for color.
- Adjust jambalaya seasoning to taste.
- Serve with a side of crusty bread.
