- 1 whole chicken (3–4 lbs)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 lemon, halved
- Fresh herbs (thyme or rosemary)
Instructions
- Preheat your oven to 375°F (190°C).
- Pat the chicken dry with paper towels.
- Rub olive oil all over the chicken.
- Season the chicken with salt, pepper, garlic powder, and onion powder.
- Stuff the cavity with lemon halves and fresh herbs.
- Place the chicken in a roasting pan.
- Roast in the oven for about 1 hour and 20 minutes or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving.

- Use a meat thermometer for best results.
- Change herbs according to your preference.
