- 1 whole chicken (3–4 lbs)
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1 lemon, halved
- 4 cloves garlic, crushed
- 2 sprigs fresh rosemary
Instructions
- Preheat your oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- Rub the chicken with olive oil.
- Season with salt, pepper, garlic powder, and paprika.
- Stuff the cavity with lemon halves, garlic, and rosemary.
- Place the chicken breast-side up in a roasting pan.
- Roast for 50-60 minutes until golden brown.
- Let rest for 10 minutes before carving.
Notes
- Use a meat thermometer to check doneness (165°F at the thickest part).
- For extra crispiness, pat the skin dry before seasoning.
- Save the pan drippings for gravy.
