Ingredients

  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 lemon, halved
  • 4 garlic cloves, smashed
  • 2 sprigs fresh rosemary

Instructions

  1. Preheat oven to 425°F.
  2. Pat chicken dry with paper towels.
  3. Rub olive oil all over chicken.
  4. Mix salt, pepper, paprika, garlic powder, and onion powder.
  5. Sprinkle spice mix evenly over chicken.
  6. Stuff cavity with lemon halves, garlic, and rosemary.
  7. Tie legs together with kitchen twine.
  8. Place chicken breast-side up in roasting pan.
  9. Roast for 1 hour 15 minutes or until internal temperature reaches 165°F.
  10. Let rest 15 minutes before carving.
