Description

Ingredients

  • 1 whole chicken (34 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 lemon, halved
  • 4 garlic cloves, smashed
  • 1 onion, quartered

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. Rub olive oil all over the chicken.
  4. Mix salt, pepper, paprika, garlic powder, and thyme. Sprinkle evenly over the chicken.
  5. Place lemon halves, garlic, and onion inside the chicken cavity.
  6. Put chicken in a roasting pan or cast-iron skillet.
  7. Roast for 1 hour 15 minutes or until internal temperature reaches 165°F (74°C).
  8. Let rest for 10 minutes before carving.
