Description

Ingredients

Scale
  • 1 bunch kale, stems removed and leaves chopped
  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • Croutons (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chickpeas with olive oil, garlic powder, salt, and pepper.
  3. Spread the chickpeas on a baking sheet in a single layer and roast for 25-30 minutes, until crispy.
  4. In a large bowl, combine the chopped kale and Caesar dressing. Massage the kale for a few minutes until it becomes tender.
  5. Add the roasted chickpeas and grated Parmesan cheese to the kale and toss gently to combine.
  6. Top with croutons if desired and serve immediately.
