Ingredients

- 1 bunch kale, stems removed and leaves chopped
- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/4 cup Caesar dressing
- Croutons (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the chickpeas with olive oil, garlic powder, salt, and pepper.
- Spread the chickpeas on a baking sheet in a single layer and roast for 25-30 minutes, until crispy.
- In a large bowl, combine the chopped kale and Caesar dressing. Massage the kale for a few minutes until it becomes tender.
- Add the roasted chickpeas and grated Parmesan cheese to the kale and toss gently to combine.
- Top with croutons if desired and serve immediately.
