Description
A hearty and nutritious soup made with kale, potatoes, and sausage.
Ingredients
Scale
- 1 lb sausage
- 4 cups kale, chopped
- 3 medium potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp thyme
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, brown the sausage over medium heat.
- Add the onion and garlic, sauté until softened.
- Add the potatoes and chicken broth, bring to a boil.
- Reduce heat, simmer until potatoes are tender.
- Stir in the kale, thyme, salt, and pepper, cook for another 5 minutes.
- Serve hot.
Notes
- You can use any type of sausage.
- Adjust seasoning as needed.
- Store leftovers in the fridge for up to 3 days.
