  • 1 cup corn syrup
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 4 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup bourbon
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Fit the pie crust into a 9-inch pie plate and crimp the edges. Set aside.
  3. In a large bowl, whisk together the corn syrup, brown sugar, granulated sugar, eggs, melted butter, bourbon, vanilla extract, and salt until well combined.
  4. Stir in the pecans until they are evenly coated with the filling.
  5. Pour the pecan mixture into the prepared pie crust, spreading it evenly.
  6. Bake in the preheated oven for 50-60 minutes, or until the filling is set and the top is golden brown. If the edges of the crust start to brown too quickly, cover them with foil.
  7. Remove from the oven and let cool completely before serving. The pie can be served with whipped cream or vanilla ice cream.

Notes

  • For a richer flavor, use dark corn syrup instead of light corn syrup.
  • You can substitute the bourbon with a non-alcoholic vanilla extract for a non-alcoholic version.
  • This pie can be made a day in advance and stored in the refrigerator.
