These delightful chocolate cupcakes are infused with mint and topped with a rich chocolate ganache, perfect for celebrating the Kentucky Derby.

- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 teaspoon peppermint extract
- 1 cup heavy cream
- 8 ounces semisweet chocolate, chopped
- Fresh mint leaves for garnish
Instructions
- Preheat the oven to 350°F (175°C). Line a cupcake pan with cupcake liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for 2 minutes.
- Stir in the boiling water and peppermint extract until well combined.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely.
- For the ganache, heat the heavy cream in a saucepan until just simmering. Pour over the chopped chocolate and let sit for 5 minutes, then stir until smooth.
- Once the cupcakes are cool, dip the tops into the ganache or use a piping bag to frost them.
- Garnish each cupcake with a fresh mint leaf before serving.
Notes
- For an extra minty flavor, you can add a few drops of green food coloring to the ganache.
- Make sure the cupcakes are completely cool before dipping in ganache to avoid melting.
