Description

These Kentucky Derby Pie Bars are a delicious twist on the classic Derby pie, featuring a rich chocolate and pecan filling in a buttery crust. Perfect for a festive occasion!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans
  • 1 cup brown sugar, packed
  • 1/2 cup corn syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon bourbon (optional)
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, mix together flour, softened butter, granulated sugar, and salt until combined. Press the mixture evenly into the bottom of the prepared pan to form a crust.
  3. Bake the crust in the preheated oven for 15 minutes, until lightly golden. Remove from oven and set aside.
  4. In a large bowl, combine the brown sugar, corn syrup, eggs, vanilla extract, bourbon (if using), and salt. Whisk until smooth and well blended.
  5. Stir in the chocolate chips and chopped pecans until evenly distributed.
  6. Pour the filling mixture over the baked crust, spreading it evenly.
  7. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and a toothpick inserted comes out clean.
  8. Remove from oven and allow to cool completely in the pan. Once cooled, lift the bars out using the parchment paper and cut into squares.

Notes
