These Kentucky Derby Pie Bars are a delicious twist on the classic Derby pie, featuring a rich chocolate and pecan filling in a buttery crust. Perfect for a festive occasion!

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup chopped pecans
- 1 cup brown sugar, packed
- 1/2 cup corn syrup
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon bourbon (optional)
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, mix together flour, softened butter, granulated sugar, and salt until combined. Press the mixture evenly into the bottom of the prepared pan to form a crust.
- Bake the crust in the preheated oven for 15 minutes, until lightly golden. Remove from oven and set aside.
- In a large bowl, combine the brown sugar, corn syrup, eggs, vanilla extract, bourbon (if using), and salt. Whisk until smooth and well blended.
- Stir in the chocolate chips and chopped pecans until evenly distributed.
- Pour the filling mixture over the baked crust, spreading it evenly.
- Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and a toothpick inserted comes out clean.
- Remove from oven and allow to cool completely in the pan. Once cooled, lift the bars out using the parchment paper and cut into squares.
Notes
- For a richer flavor, use dark chocolate chips.
- These bars can be stored in an airtight container at room temperature for up to 3 days.
