Description

These Kentucky Derby Pie Bars are a delicious twist on the classic Derby pie, featuring a rich chocolate filling, pecans, and a buttery crust. Perfect for your Derby Day celebrations!

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup light corn syrup
  • 1 cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.
  2. In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the flour and salt, mixing until a dough forms. Press this mixture into the bottom of the prepared baking dish to form the crust.
  4. In a separate bowl, melt the chocolate chips in the microwave or over a double boiler until smooth. Let cool slightly.
  5. In another bowl, whisk together the corn syrup, brown sugar, eggs, and vanilla extract until well combined.
  6. Stir the melted chocolate into the sugar mixture until fully incorporated.
  7. Fold in the chopped pecans and mini marshmallows if using.
  8. Pour the chocolate filling over the crust in the baking dish, spreading it evenly.
  9. Bake for 30-35 minutes or until set and slightly puffed. A toothpick inserted in the center should come out with a few moist crumbs.
  10. Allow to cool completely in the pan before cutting into bars. Serve and enjoy!

Notes

  • These bars can be stored in an airtight container at room temperature for up to 3 days.
  • Feel free to add bourbon to the filling for an authentic Kentucky Derby twist!
