These Kentucky Derby Pie Bars are a delicious twist on the classic Derby pie, featuring a rich chocolate filling, pecans, and a buttery crust. Perfect for your Derby Day celebrations!

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup light corn syrup
- 1 cup brown sugar, packed
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1/2 cup mini marshmallows (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish.
- In a medium bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the flour and salt, mixing until a dough forms. Press this mixture into the bottom of the prepared baking dish to form the crust.
- In a separate bowl, melt the chocolate chips in the microwave or over a double boiler until smooth. Let cool slightly.
- In another bowl, whisk together the corn syrup, brown sugar, eggs, and vanilla extract until well combined.
- Stir the melted chocolate into the sugar mixture until fully incorporated.
- Fold in the chopped pecans and mini marshmallows if using.
- Pour the chocolate filling over the crust in the baking dish, spreading it evenly.
- Bake for 30-35 minutes or until set and slightly puffed. A toothpick inserted in the center should come out with a few moist crumbs.
- Allow to cool completely in the pan before cutting into bars. Serve and enjoy!
Notes
- These bars can be stored in an airtight container at room temperature for up to 3 days.
- Feel free to add bourbon to the filling for an authentic Kentucky Derby twist!
