Description

A delicious twist on the classic Kentucky Derby Pie, this version incorporates toasted coconut for an irresistible flavor and texture.

Ingredients

Scale
  • 1 unbaked pie crust
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans
  • 1 cup shredded coconut, toasted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the granulated sugar, melted butter, and brown sugar. Mix well until combined.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Fold in the chocolate chips, chopped pecans, and toasted coconut until evenly distributed.
  5. Pour the filling into the unbaked pie crust.
  6. Bake in the preheated oven for 30-35 minutes, or until the center is set and the top is golden brown.
  7. Remove from the oven and allow to cool for at least 15 minutes before slicing.
  8. Serve warm or at room temperature, optionally with whipped cream.

Notes

  • For best results, use fresh coconut and toast it lightly before adding to the mixture.
  • You can substitute the pecans with walnuts if desired.
  • This pie is best enjoyed the day it is made, but can be stored in the refrigerator for 2-3 days.
