A delicious twist on the classic Kentucky Derby Pie, this version incorporates toasted coconut for an irresistible flavor and texture.

- 1 unbaked pie crust
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup chopped pecans
- 1 cup shredded coconut, toasted
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the granulated sugar, melted butter, and brown sugar. Mix well until combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Fold in the chocolate chips, chopped pecans, and toasted coconut until evenly distributed.
- Pour the filling into the unbaked pie crust.
- Bake in the preheated oven for 30-35 minutes, or until the center is set and the top is golden brown.
- Remove from the oven and allow to cool for at least 15 minutes before slicing.
- Serve warm or at room temperature, optionally with whipped cream.
Notes
- For best results, use fresh coconut and toast it lightly before adding to the mixture.
- You can substitute the pecans with walnuts if desired.
- This pie is best enjoyed the day it is made, but can be stored in the refrigerator for 2-3 days.
