Ingredients

  • 1 head Cauliflower Mac and Cheese (cut into florets)
  • 8 oz Cream Cheese (softened)
  • 2 cups Cheddar Cheese (shredded)
  • 1 tsp Garlic Powder
  • to taste Salt
  • to taste Black Pepper
  • 2 tbsp Olive Oil (for roasting)
  • 2 Zucchini (sliced)
  • 1 tsp Italian Seasoning
  • 1/2 cup Parmesan Cheese (grated)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a pot of boiling water, add cauliflower florets and cook until tender, about 5 minutes. Drain and set aside.
  3. In a large bowl, combine the softened cream cheese, cheddar cheese, garlic powder, salt, and pepper. Add the cauliflower and mix until well combined.
  4. Transfer the mixture to a greased baking dish and top with extra cheddar cheese if desired. Bake for 20 minutes or until the top is bubbly and golden.
  5. For the roasted zucchini, toss the sliced zucchini with olive oil, Italian seasoning, salt, and pepper in a mixing bowl.
  6. Spread the zucchini in a single layer on a baking sheet and roast in the oven for 15-20 minutes until tender and slightly caramelized.
  7. Sprinkle with Parmesan cheese before serving.
