- 1 head Cauliflower Mac and Cheese (cut into florets)
- 8 oz Cream Cheese (softened)
- 2 cups Cheddar Cheese (shredded)
- 1 tsp Garlic Powder
- to taste Salt
- to taste Black Pepper
- 2 tbsp Olive Oil (for roasting)
- 2 Zucchini (sliced)
- 1 tsp Italian Seasoning
- 1/2 cup Parmesan Cheese (grated)
Instructions
- Preheat your oven to 400°F (200°C).
- In a pot of boiling water, add cauliflower florets and cook until tender, about 5 minutes. Drain and set aside.
- In a large bowl, combine the softened cream cheese, cheddar cheese, garlic powder, salt, and pepper. Add the cauliflower and mix until well combined.
- Transfer the mixture to a greased baking dish and top with extra cheddar cheese if desired. Bake for 20 minutes or until the top is bubbly and golden.
- For the roasted zucchini, toss the sliced zucchini with olive oil, Italian seasoning, salt, and pepper in a mixing bowl.
- Spread the zucchini in a single layer on a baking sheet and roast in the oven for 15-20 minutes until tender and slightly caramelized.
- Sprinkle with Parmesan cheese before serving.

- Feel free to add bacon bits or jalapeños for additional flavor.
