- 2 lbs boneless chicken breasts
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup chicken broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- Tortilla chips or taco shells for serving
- Sour cream and salsa for topping (optional)
Instructions
- Place chicken breasts in the bottom of the crockpot.
- Add black beans, corn, diced tomatoes, and taco seasoning on top of the chicken.
- Pour chicken broth over the mixture.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- Remove chicken from the crockpot and shred it with two forks.
- Return the shredded chicken to the crockpot and stir to combine.
- Top with shredded cheese and cover for an additional 10-15 minutes until melted.
- Serve with tortilla chips or taco shells, and top with sour cream and salsa if desired.
Notes
- This meal can be customized with your kids’ favorite toppings.
- You can add diced bell peppers or onions for extra veggies.
- Leftovers can be stored in the refrigerator for up to 3 days.
