Ingredients

  • 2 lbs boneless chicken breasts
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Tortilla chips or taco shells for serving
  • Sour cream and salsa for topping (optional)

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add black beans, corn, diced tomatoes, and taco seasoning on top of the chicken.
  3. Pour chicken broth over the mixture.
  4. Cover and cook on low for 6-8 hours or on high for 4 hours.
  5. Remove chicken from the crockpot and shred it with two forks.
  6. Return the shredded chicken to the crockpot and stir to combine.
  7. Top with shredded cheese and cover for an additional 10-15 minutes until melted.
  8. Serve with tortilla chips or taco shells, and top with sour cream and salsa if desired.

Notes

  • This meal can be customized with your kids’ favorite toppings.
  • You can add diced bell peppers or onions for extra veggies.
  • Leftovers can be stored in the refrigerator for up to 3 days.
