Ingredients

  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp green onions, chopped
  • 1/4 cup Korean BBQ sauce
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 2 cups cooked white rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1 tbsp sesame seeds

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix ground beef, panko, egg, garlic, ginger, green onions, soy sauce, and sesame oil.
  3. Shape the mixture into 1-inch meatballs and place on the baking sheet.
  4. Bake for 15-18 minutes until fully cooked.
  5. Brush meatballs with Korean BBQ sauce and broil for 2 minutes.
  6. Serve over rice, topped with carrots, cucumbers, and sesame seeds.

Notes

  • Use lean ground beef for a less greasy result.
  • For extra heat, add 1 tsp gochujang to the meatball mixture.
