Ingredients

  • 1 lb beef short ribs, sliced thinly against the grain
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp rice vinegar
  • 1 tsp gochujang (Korean chili paste)
  • 8 small flour or corn tortillas
  • 1 cup shredded cabbage
  • 1/2 cup kimchi
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a bowl, mix soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, and gochujang to create the marinade.
  2. Add the sliced beef to the marinade, cover, and refrigerate for at least 30 minutes or up to overnight.
  3. Heat a grill or skillet over medium-high heat. Cook the marinated beef for about 2-3 minutes on each side until well browned and cooked through.
  4. Warm the tortillas in a dry skillet or microwave until pliable.
  5. Assemble the tacos by placing a few pieces of cooked beef on each tortilla, topped with shredded cabbage, kimchi, and sliced green onions.
  6. Garnish with sesame seeds and serve immediately.

Notes

  • For an extra kick, consider adding sliced jalapeños or a drizzle of sriracha.
