- 1 lb beef short ribs, sliced thinly against the grain
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp rice vinegar
- 1 tsp gochujang (Korean chili paste)
- 8 small flour or corn tortillas
- 1 cup shredded cabbage
- 1/2 cup kimchi
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- In a bowl, mix soy sauce, brown sugar, sesame oil, garlic, ginger, rice vinegar, and gochujang to create the marinade.
- Add the sliced beef to the marinade, cover, and refrigerate for at least 30 minutes or up to overnight.
- Heat a grill or skillet over medium-high heat. Cook the marinated beef for about 2-3 minutes on each side until well browned and cooked through.
- Warm the tortillas in a dry skillet or microwave until pliable.
- Assemble the tacos by placing a few pieces of cooked beef on each tortilla, topped with shredded cabbage, kimchi, and sliced green onions.
- Garnish with sesame seeds and serve immediately.
Notes
- For an extra kick, consider adding sliced jalapeños or a drizzle of sriracha.
- Feel free to substitute the beef with chicken or tofu for a different protein option.
