Ingredients

  • 500g lamb, cut into cubes
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 1-inch ginger, grated
  • 2 tomatoes, pureed
  • 1 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1 tsp red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add minced garlic and grated ginger. Cook for 1 minute.
  4. Add lamb cubes and cook until browned on all sides.
  5. Stir in turmeric, coriander powder, red chili powder, and salt. Mix well.
  6. Add tomato puree and cook until the oil separates from the masala.
  7. Pour in 2 cups of water, cover, and simmer for 45 minutes or until lamb is tender.
  8. Sprinkle garam masala and garnish with fresh coriander leaves before serving.

Notes

  • Marinate the lamb in yogurt for 30 minutes beforehand for extra tenderness.
  • Adjust chili powder to your preferred spice level.
  • Serve hot with rice or naan bread.
