- 1 cup heavy cream
- 1 cup whole milk
- 1/4 cup honey
- 1 tablespoon dried culinary lavender
- 2 1/4 teaspoons gelatin (or 1 packet)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a small bowl, sprinkle gelatin over 2 tablespoons of water and let it bloom for about 5 minutes.
- In a saucepan, combine the heavy cream, whole milk, honey, lavender, and salt. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.
- Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved.
- Add the vanilla extract and mix well.
- Strain the mixture through a fine-mesh sieve into a large bowl to remove the lavender buds.
- Divide the mixture evenly among serving glasses or ramekins.
- Refrigerate for at least 4 hours, or until set.
- Serve chilled, garnished with fresh lavender or honey, if desired.
