Ingredients

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/4 cup honey
  • 1 tablespoon dried culinary lavender
  • 2 1/4 teaspoons gelatin (or 1 packet)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a small bowl, sprinkle gelatin over 2 tablespoons of water and let it bloom for about 5 minutes.
  2. In a saucepan, combine the heavy cream, whole milk, honey, lavender, and salt. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.
  3. Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved.
  4. Add the vanilla extract and mix well.
  5. Strain the mixture through a fine-mesh sieve into a large bowl to remove the lavender buds.
  6. Divide the mixture evenly among serving glasses or ramekins.
  7. Refrigerate for at least 4 hours, or until set.
  8. Serve chilled, garnished with fresh lavender or honey, if desired.
