Description

This quick and easy leftover roast beef stir-fry is a delicious way to use up your extra meat while creating a flavorful meal in just 30 minutes.


Ingredients

  • 2 cups leftover roast beef, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • Cooked rice or noodles, for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced onion and bell pepper, and stir-fry for about 2-3 minutes until they start to soften.
  3. Add the broccoli and minced garlic, and continue to stir-fry for another 3-4 minutes until the broccoli is bright green and tender-crisp.
  4. Add the leftover roast beef to the skillet, and pour in the soy sauce, oyster sauce, and sesame oil. Stir well to combine and heat through, about 2 minutes.
  5. Season with salt and pepper to taste.
  6. Serve over cooked rice or noodles.

Notes

  • Feel free to add any of your favorite vegetables to the stir-fry.
  • You can substitute the soy sauce with tamari for a gluten-free option.
