Description
This quick and easy leftover roast beef stir-fry is a delicious way to use up your extra meat while creating a flavorful meal in just 30 minutes.

- 2 cups leftover roast beef, sliced into thin strips
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- Salt and pepper, to taste
- Cooked rice or noodles, for serving
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced onion and bell pepper, and stir-fry for about 2-3 minutes until they start to soften.
- Add the broccoli and minced garlic, and continue to stir-fry for another 3-4 minutes until the broccoli is bright green and tender-crisp.
- Add the leftover roast beef to the skillet, and pour in the soy sauce, oyster sauce, and sesame oil. Stir well to combine and heat through, about 2 minutes.
- Season with salt and pepper to taste.
- Serve over cooked rice or noodles.
Notes
- Feel free to add any of your favorite vegetables to the stir-fry.
- You can substitute the soy sauce with tamari for a gluten-free option.
