Ingredients

  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch square baking dish.
  2. In a mixing bowl, combine the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs.
  3. Press the mixture into the bottom of the prepared baking dish to form a crust.
  4. Bake the crust for 15 minutes, or until lightly golden.
  5. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
  6. Pour the lemon mixture over the baked crust.
  7. Return to the oven and bake for an additional 20 minutes, or until the filling is set.
  8. Allow to cool completely before dusting with powdered sugar and cutting into squares.
