- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease an 8-inch square baking dish.
- In a mixing bowl, combine the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs.
- Press the mixture into the bottom of the prepared baking dish to form a crust.
- Bake the crust for 15 minutes, or until lightly golden.
- In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, baking powder, and salt until smooth.
- Pour the lemon mixture over the baked crust.
- Return to the oven and bake for an additional 20 minutes, or until the filling is set.
- Allow to cool completely before dusting with powdered sugar and cutting into squares.
Notes
- For a stronger lemon flavor, add more lemon zest.
- These lemon bars can be stored in the refrigerator for up to a week.
