Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, sugar, baking powder, and salt.
- Add butter, egg, lemon zest, and lemon juice. Mix until smooth.
- Spoon batter into mini muffin tins, filling each halfway.
- Bake for 12-15 minutes or until lightly golden.
- Let cool before serving.
