A simple and delicious lemon chicken recipe that’s perfect for a weeknight dinner. Tender chicken breasts are marinated in a zesty lemon sauce and then grilled or baked to perfection.

- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced for garnish
- Fresh parsley, chopped for garnish
Instructions
- In a bowl, whisk together the lemon juice, olive oil, garlic, oregano, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill or oven to 375°F (190°C).
- Remove the chicken from the marinade and discard the marinade.
- Grill the chicken for about 6-7 minutes on each side, or bake in the oven for 25-30 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for a few minutes before slicing.
- Serve garnished with lemon slices and chopped parsley.
