- 2 salmon fillets (6 oz each)
- 1 lb potatoes, cubed
- 2 tbsp olive oil
- 1 tbsp fresh dill, chopped
- 1 lemon, juiced and zested
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss potato cubes with 1 tbsp olive oil, garlic powder, salt, and pepper. Spread on a baking sheet.
- Roast potatoes for 20 minutes, flipping halfway.
- Season salmon with lemon zest, dill, salt, and pepper. Drizzle with remaining olive oil.
- Add salmon to the baking sheet with potatoes. Roast for 12-15 minutes.
- Drizzle with lemon juice before serving.

- Use fresh dill for best flavor.
- Adjust cooking time based on salmon thickness.
- For extra crispiness, broil potatoes for 2-3 minutes at the end.
