Ingredients

- 1.5 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
- 3 tbsp olive oil
- 3 cloves garlic (minced)
- 2 lemons (juiced and zested)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1/2 tsp paprika
- Wooden or metal skewers
Instructions
- In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, salt, pepper, oregano, and paprika.
- Add chicken cubes to the marinade and coat evenly. Cover and refrigerate for at least 30 minutes (up to 4 hours).
- If using wooden skewers, soak them in water for 20 minutes to prevent burning.
- Thread marinated chicken onto skewers.
- Preheat grill to medium-high heat (about 375°F).
- Grill skewers for 5-7 minutes per side or until internal temperature reaches 165°F.
- Serve hot with extra lemon wedges.
Notes
- For extra flavor, add bell peppers or onions between chicken pieces.
- Use fresh lemon juice for best results.
- Chicken can also be baked at 400°F for 15-20 minutes if grilling is not possible.
