- 4 boneless, skinless chicken breasts
- 2 tbsp lemon juice
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup diced pineapple
- 1 cup diced mango
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 tbsp lime juice
Instructions
- In a bowl, mix lemon juice, ginger, garlic, olive oil, salt, and pepper.
- Coat chicken breasts with the marinade and let sit for 20 minutes.
- Grill or pan-fry chicken for 6-7 minutes per side until fully cooked.
- In another bowl, combine pineapple, mango, red onion, cilantro, and lime juice to make the salsa.
- Serve chicken topped with the salsa.
