- 1/2 cup breadcrumbs
- 1 egg
- 1 tbsp lemon zest
- 2 tbsp chopped fresh herbs (parsley, dill, or basil)
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup orzo
- 2 cups chicken or vegetable broth
- 200g feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/4 cup plain yogurt or sour cream
Instructions
- Preheat oven to 190°C (375°F).
- Mix ground meat, breadcrumbs, egg, lemon zest, herbs, garlic powder, salt, and pepper in a bowl.
- Shape into small meatballs and place on a baking sheet.
- Bake for 20-25 minutes until cooked through.
- Cook orzo in broth according to package instructions.
- Blend feta, olive oil, lemon juice, and yogurt until smooth.
- Serve meatballs over orzo with whipped feta on top.
