- 8 ounces pasta (spaghetti or your choice)
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
- Fresh parsley, chopped for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- In a large bowl, combine the ricotta cheese, lemon zest, and lemon juice. Mix until smooth and creamy.
- Add the cooked pasta and spinach mixture to the bowl with the ricotta. Toss to combine, adding reserved pasta water a little at a time until the desired creaminess is reached.
- Season with salt and pepper to taste.
- Serve topped with grated Parmesan cheese and chopped parsley if desired.
Notes
- Feel free to add grilled chicken or shrimp for extra protein.
- For a bit of heat, add red pepper flakes when sautéing the garlic.
- This dish is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 2 days.
