Ingredients

  • 8 ounces pasta (spaghetti or your choice)
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  4. In a large bowl, combine the ricotta cheese, lemon zest, and lemon juice. Mix until smooth and creamy.
  5. Add the cooked pasta and spinach mixture to the bowl with the ricotta. Toss to combine, adding reserved pasta water a little at a time until the desired creaminess is reached.
  6. Season with salt and pepper to taste.
  7. Serve topped with grated Parmesan cheese and chopped parsley if desired.

Notes

  • Feel free to add grilled chicken or shrimp for extra protein.
  • For a bit of heat, add red pepper flakes when sautéing the garlic.
  • This dish is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 2 days.
