- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Mint leaves for garnish (optional)
Instructions
- In a blender, combine the mixed berries and lemon juice. Blend until smooth.
- In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Gently fold the berry puree into the whipped cream until combined. Be careful not to deflate the whipped cream.
- Spoon the mousse into serving cups and refrigerate for at least 1 hour to set.
- Garnish with mint leaves and additional berries before serving.
