- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced tomatoes
- 1/4 cup sliced jalapeños
- 1/4 cup chopped fresh cilantro
- Tortilla chips for serving
- Sour cream and salsa for topping
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until no longer pink, about 5-7 minutes.
- Sprinkle taco seasoning over chicken and stir to coat evenly.
- Add black beans and corn, stirring to combine.
- Top with shredded cheeses and cover until melted, about 3 minutes.
- Remove from heat and garnish with tomatoes, jalapeños, and cilantro.
- Serve hot with tortilla chips, sour cream, and salsa.
