- 2 large potatoes, diced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 cup diced tomatoes
- 1/2 cup diced onions
- 1/4 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 400°F.
- Toss diced potatoes with olive oil, salt, pepper, and paprika.
- Spread potatoes on a baking sheet and roast for 25 minutes.
- Brown ground beef in a skillet, then add taco seasoning and water as directed.
- Assemble bowls with roasted potatoes, ground beef, cheese, tomatoes, onions, sour cream, and cilantro.
