Ingredients

- 1 large russet potato
- 1/2 cup cooked shrimp, chopped
- 1/2 cup cooked crab meat
- 1/4 cup sour cream
- 1/4 cup shredded cheddar cheese
- 1 tbsp butter
- 1 tbsp chopped chives
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Scrub the potato and pierce it with a fork. Bake for 45-60 minutes until tender.
- Let the potato cool slightly, then slice it open lengthwise.
- Fluff the inside with a fork and add butter, salt, and pepper.
- Mix shrimp, crab meat, garlic powder, and half the cheese in a bowl.
- Spoon the seafood mix into the potato.
- Top with remaining cheese and return to the oven for 5-7 minutes until melted.
- Garnish with sour cream and chives before serving.
