Ingredients

  • 1/2 cup cooked shrimp, chopped
  • 1/2 cup cooked crab meat
  • 1/4 cup sour cream
  • 1/4 cup shredded cheddar cheese
  • 1 tbsp butter
  • 1 tbsp chopped chives
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub the potato and pierce it with a fork. Bake for 45-60 minutes until tender.
  3. Let the potato cool slightly, then slice it open lengthwise.
  4. Fluff the inside with a fork and add butter, salt, and pepper.
  5. Mix shrimp, crab meat, garlic powder, and half the cheese in a bowl.
  6. Spoon the seafood mix into the potato.
  7. Top with remaining cheese and return to the oven for 5-7 minutes until melted.
  8. Garnish with sour cream and chives before serving.
