Ingredients

  • 2 lobster tails, cooked and chopped
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1/4 cup tomato paste
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes.
  2. Stir in the tomato paste, paprika, and cayenne pepper, cooking for an additional 2 minutes.
  3. Pour in the seafood stock and bring to a simmer. Let it cook for 15-20 minutes to allow the flavors to meld.
  4. Using an immersion blender, blend the soup until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches.
  5. Return the soup to the pot and stir in the heavy cream. Add the chopped lobster and season with salt and pepper. Heat through for another 5 minutes.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, add a splash of sherry or white wine.
  • You can use leftover lobster shells to make your own seafood stock for added depth.
