This creamy lobster bisque is the perfect combination of rich flavors and smooth texture, ideal for a comforting meal or a fancy dinner party.

- 2 lobster tails, cooked and chopped
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1/4 cup tomato paste
- 4 cups seafood stock
- 1 cup heavy cream
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery, and sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the tomato paste, paprika, and cayenne pepper, cooking for an additional 2 minutes.
- Pour in the seafood stock and bring to a simmer. Let it cook for 15-20 minutes to allow the flavors to meld.
- Using an immersion blender, blend the soup until smooth. If using a regular blender, allow the soup to cool slightly before blending in batches.
- Return the soup to the pot and stir in the heavy cream. Add the chopped lobster and season with salt and pepper. Heat through for another 5 minutes.
- Serve hot, garnished with fresh parsley.
Notes
- For a richer flavor, add a splash of sherry or white wine.
- You can use leftover lobster shells to make your own seafood stock for added depth.
- This bisque can be made ahead of time and stored in the refrigerator for up to 3 days.
