  • 4 cups mixed greens (lettuce, spinach, arugula)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup pickles, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 2 tbsp sugar-free ketchup
  • 1 tbsp mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat. Cook the ground beef, breaking it into crumbles, until browned. Drain excess fat and season with salt and pepper.
  2. In a small bowl, mix mayonnaise, sugar-free ketchup, mustard, apple cider vinegar, and paprika to make the creamy sauce.
  3. Arrange the mixed greens in a large bowl. Top with cooked beef, tomatoes, red onion, pickles, and cheese.
  4. Drizzle the creamy sauce over the salad and toss lightly before serving.
