- 4 cups mixed greens (lettuce, spinach, arugula)
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup pickles, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup mayonnaise
- 2 tbsp sugar-free ketchup
- 1 tbsp mustard
- 1 tsp apple cider vinegar
- 1/2 tsp paprika
- Salt and pepper to taste
Instructions
- Heat a skillet over medium-high heat. Cook the ground beef, breaking it into crumbles, until browned. Drain excess fat and season with salt and pepper.
- In a small bowl, mix mayonnaise, sugar-free ketchup, mustard, apple cider vinegar, and paprika to make the creamy sauce.
- Arrange the mixed greens in a large bowl. Top with cooked beef, tomatoes, red onion, pickles, and cheese.
- Drizzle the creamy sauce over the salad and toss lightly before serving.
Notes
- Use grass-fed beef for a richer flavor.
- For extra crunch, add crispy bacon bits.
- Store leftover sauce in an airtight container for up to 3 days.
