- 4 boneless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 cup broccoli florets
- 1 cup quinoa
- 2 cups water
Instructions
- Preheat the oven to 375°F (190°C).
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water; bring to a boil.
- Reduce heat and simmer for 15 minutes.
- While quinoa cooks, season chicken with olive oil, garlic powder, and black pepper.
- Place chicken in the oven and bake for 25-30 minutes.
- Add broccoli to the pot in the last 5 minutes of cooking quinoa.
- Serve chicken with quinoa and broccoli.
