Description

Ingredients

  • 4 boneless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 cup broccoli florets
  • 1 cup quinoa
  • 2 cups water

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the quinoa under cold water.
  3. In a pot, combine quinoa and water; bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. While quinoa cooks, season chicken with olive oil, garlic powder, and black pepper.
  6. Place chicken in the oven and bake for 25-30 minutes.
  7. Add broccoli to the pot in the last 5 minutes of cooking quinoa.
  8. Serve chicken with quinoa and broccoli.
