A refreshing and nutritious vegetarian quinoa salad that’s perfect for lunch. Packed with vegetables and protein, this salad is easy to make and can be enjoyed cold or at room temperature.

- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1 can (15 oz) black beans, rinsed and drained
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce to a simmer. Cover and cook for about 15 minutes or until the quinoa is fluffy and water is absorbed. Remove from heat and let cool.
- In a large bowl, combine the diced cucumber, bell pepper, cherry tomatoes, red onion, black beans, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, cumin, salt, and pepper.
- Add the cooled quinoa to the vegetable mixture and pour the dressing over the top. Toss to combine.
- Serve immediately or refrigerate for later. Enjoy your healthy vegetarian lunch!
