Ingredients

- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 can black beans, rinsed and drained
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine quinoa, tomatoes, cucumber, bell pepper, and black beans.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Divide the salad into meal prep containers.
- Store in the refrigerator for up to 5 days.

- Feel free to add your favorite protein, like grilled chicken or tofu.
- Adjust the dressing to your taste.
