- 1.5 cups graham cracker crumbs
- 1/2 cup crushed pistachios
- 1/4 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 tbsp lemon zest
- 1 tbsp lime zest
- 1/4 cup lemon juice
- 1/4 cup lime juice
- 1 tsp vanilla extract
- 1 cup cherry pie filling
Instructions
- Preheat oven to 325°F.
- Mix graham cracker crumbs, pistachios, and melted butter. Press into a 9-inch springform pan.
- Bake crust for 10 minutes, then cool.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing after each.
- Stir in lemon zest, lime zest, lemon juice, lime juice, and vanilla.
- Pour filling over the crust.
- Bake for 45-50 minutes until set.
- Cool completely, then top with cherry pie filling.
- Chill for at least 4 hours before serving.
Notes
- For a smoother texture, use room-temperature cream cheese.
- Chill the cheesecake overnight for best results.
- Substitute fresh cherries for pie filling if preferred.
