- 4 boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 1/4 cup maple syrup
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
Instructions
- Preheat oven to 375°F (190°C).
- Toss sweet potatoes with 1 tbsp olive oil, salt, pepper, and paprika. Spread on a baking sheet.
- Season chicken with garlic powder, salt, and pepper. Heat remaining olive oil in a skillet over medium heat.
- Cook chicken for 3-4 minutes per side until lightly browned.
- Brush chicken with maple syrup and place on the baking sheet with sweet potatoes.
- Roast for 20-25 minutes until chicken is cooked through and sweet potatoes are tender.
- Serve warm.

- Use pure maple syrup for best flavor.
