Ingredients

- 2 cups heavy cream
- 1/2 cup granulated sugar
- 4 large egg yolks
- 1 tbsp matcha green tea powder
- 1 tsp vanilla extract
- 2 tbsp turbinado sugar (for caramelizing)
Instructions
- Preheat oven to 325°F (160°C).
- Heat cream in a saucepan until steaming but not boiling.
- Whisk egg yolks, granulated sugar, and matcha powder in a bowl.
- Slowly pour the warm cream into the egg mixture, whisking constantly.
- Stir in vanilla extract.
- Strain the mixture into ramekins.
- Bake in a water bath for 30-35 minutes until set but still slightly jiggly.
- Chill for at least 4 hours.
- Sprinkle turbinado sugar on top and caramelize with a torch.

- Serve immediately after caramelizing.
