Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 1 tbsp matcha green tea powder
  • 1 tsp vanilla extract
  • 2 tbsp turbinado sugar (for caramelizing)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Heat cream in a saucepan until steaming but not boiling.
  3. Whisk egg yolks, granulated sugar, and matcha powder in a bowl.
  4. Slowly pour the warm cream into the egg mixture, whisking constantly.
  5. Stir in vanilla extract.
  6. Strain the mixture into ramekins.
  7. Bake in a water bath for 30-35 minutes until set but still slightly jiggly.
  8. Chill for at least 4 hours.
  9. Sprinkle turbinado sugar on top and caramelize with a torch.
