Ingredients
Scale
- 1/2 cup (120g) white chocolate, chopped
- 1/4 cup (60g) unsalted butter
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/4 cup (32g) all-purpose flour
- 2 tablespoons matcha powder
- Pinch of salt
- Powdered sugar, for dusting
- Vanilla ice cream or whipped cream, for serving (optional)
Instructions
- Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out any excess.
- In a microwave-safe bowl, combine the chopped white chocolate and butter. Microwave in 30-second intervals, stirring between each, until melted and smooth.
- In a separate bowl, whisk together the granulated sugar, eggs, egg yolks, and vanilla extract until well combined.
- Add the melted chocolate mixture to the egg mixture and stir until smooth.
- Sift in the flour, matcha powder, and a pinch of salt. Gently fold until just combined, being careful not to overmix.
- Divide the batter evenly among the prepared ramekins.
- Place the ramekins on a baking sheet and bake for 12-14 minutes, until the edges are firm but the center is still soft.
- Remove from the oven and let cool for 1 minute. Carefully run a knife around the edges to loosen, then invert onto serving plates.
- Dust with powdered sugar and serve immediately with vanilla ice cream or whipped cream, if desired.
Notes
- For best results, use high-quality white chocolate for a richer flavor.
- Make sure not to overbake, as you want the centers to remain gooey.
- These lava cakes can be prepared in advance and refrigerated. Bake them just before serving.
