  • 1/4 cup (60g) unsalted butter
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup (32g) all-purpose flour
  • 2 tablespoons matcha powder
  • Pinch of salt
  • Powdered sugar, for dusting
  • Vanilla ice cream or whipped cream, for serving (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour, tapping out any excess.
  2. In a microwave-safe bowl, combine the chopped white chocolate and butter. Microwave in 30-second intervals, stirring between each, until melted and smooth.
  3. In a separate bowl, whisk together the granulated sugar, eggs, egg yolks, and vanilla extract until well combined.
  4. Add the melted chocolate mixture to the egg mixture and stir until smooth.
  5. Sift in the flour, matcha powder, and a pinch of salt. Gently fold until just combined, being careful not to overmix.
  6. Divide the batter evenly among the prepared ramekins.
  7. Place the ramekins on a baking sheet and bake for 12-14 minutes, until the edges are firm but the center is still soft.
  8. Remove from the oven and let cool for 1 minute. Carefully run a knife around the edges to loosen, then invert onto serving plates.
  9. Dust with powdered sugar and serve immediately with vanilla ice cream or whipped cream, if desired.
