- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup black beans, rinsed
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 avocado, sliced
- 1 lime, juiced
- Salt and pepper to taste
- Cilantro for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes, or until liquid is absorbed.
- Fluff quinoa with a fork and let it cool.
- In a bowl, mix black beans, corn, and diced bell pepper.
- Add the cooled quinoa to the mixture.
- Drizzle lime juice and season with salt and pepper.
- Serve topped with avocado slices and cilantro.
Notes
- This dish can be served warm or cold.
- Substitute any vegetables you prefer.
- Great for meal prep and can be stored in the fridge for up to 3 days.
