Ingredients

  • 1 cup black beans, rinsed

  • 1 bell pepper, diced
  • 1 avocado, sliced

  • Salt and pepper to taste
  • Cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes, or until liquid is absorbed.
  4. Fluff quinoa with a fork and let it cool.
  5. In a bowl, mix black beans, corn, and diced bell pepper.
  6. Add the cooled quinoa to the mixture.
  7. Drizzle lime juice and season with salt and pepper.
  8. Serve topped with avocado slices and cilantro.
