- 4 large tortillas
- 2 cups cooked rice
- 1 can black beans, drained
- 1 cup corn, canned or frozen
- 1 cup shredded cheese
- 1 cup diced bell peppers
- 1 tablespoon taco seasoning
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced bell peppers and sauté until soft.
- In a large bowl, combine rice, black beans, corn, sautéed peppers, cheese, and taco seasoning.
- Divide the mixture evenly among the tortillas.
- Roll up each tortilla tightly to form burritos.
- Wrap each burrito in foil or plastic wrap for storage.
- Refrigerate or freeze as needed.

- Feel free to add cooked chicken or beef for extra protein.
