Ingredients

  • 2 cups of quinoa
  • 4 cups of vegetable broth
  • 1 cup of chopped bell peppers
  • 1 cup of black beans, drained
  • 1 cup of corn
  • 1 teaspoon of cumin
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a large bowl, mix bell peppers, black beans, corn, cumin, salt, and pepper.
  5. Add cooked quinoa to the bowl and mix well.
  6. Divide into meal prep containers.
